{Menu Monday: 9.14.20}


 Today is our first official day of school over here. I've technically been back at it for 2 weeks already now, with virtual meetings galore and getting ready for remote teaching, but today was our first day back with kiddos.  All in all, it went well, but it's sure a lot of screen time. 

With today being the first day of school, it also marks the beginning of the end of our public schooling adventure. My last kiddo is now a senior, and what a ride it's been! She is amazing: smart and kind and loving and generous. She has big dreams and I love her heart to serve our community. I'm so excited to celebrate the "last things" with her, and I hope that we get to have some sense of normalcy for at least part of her senior year. 

To celebrate the last first day, we are having one of her favorites tonight for dinner: Chicken Lettuce Wraps.  Here's the plan for the rest of the week:

Monday- Chicken Lettuce Wraps
Tuesday- Beef and Broccoli
Wednesday -Leftovers
Thursday- Chicken with Pesto Penne
Friday- Lasagna
Saturday- Leftovers
Sunday- Nachos
 
It's starting to be a little cooler weather around here, which is definitely starting to put me in the mood for comfort food. Another week or so and I'll be breaking out ALLLL the soup recipes. Hopefully the cooler weather will help clear out the nasty smoke that's got us all staying inside right now!
